Cooking Guide
Bring to room temperature for 1 hour. Preheat oven to 220°C. Roast for 20 minutes, then reduce to 170°C until 52 to 54°C internal for medium rare. Rest 20 minutes. 

Storage
Keep refrigerated below 4 °C. Once opened, consume within 3 days or freeze on the day of purchase. Follow food safety guidelines.
