Ingredients

Everything for 4 servings

  • 2 generous cups cherries, pitted
  • 2 tbsp brown sugar
  • 2 tsp vanilla extract
  • 1/2 lemon, juice only
  • 1 tbsp cornstarch
  • 1 sheet puff pastry
  • Extra brown sugar to top

Method

1

Preheat the oven to 180°C and line a tray with baking paper

2

In a saucepan, combine the pitted cherries, brown sugar, vanilla extract and lemon juice. Gently simmer for about 5 minutes, until the cherries are evenly coated and the ingredients are well combined

3

Remove from the heat, drain the excess liquid (keep this for later) and mix in the cornstarch

4

Roll out the puff pastry sheet onto the baking tray. Dust the centre with a little bit of brown sugar before placing the cherry mixture in the centre of the pastry, leaving about a 3c border around the edges

5

Carefully fold the edges of the pastry up over the cherry filling, overlapping as you go to create a rustic shape

6

Sprinkle a little extra brown sugar over the folded pastry edges

7

Place the galette in the preheated oven and bake for 25 minutes or until the pastry is golden brown and crispy.

8

Remove the galette from the oven, brush over the reserved cherry juice, and serve warm
