Ingredients
Everything for 12 servings
Method
Cream together the butter, sugars and salt until light and fluffy.
Add the eggs and mix well.
Sift in the flour and mix until just combined.
Roughly chop the chocolate bars and fold through the dough.
Wearing gloves, add a few cherry pieces to each cookie.
Roll the dough into balls weighing 40–50g. If time allows, chill for at least 15 minutes (or ideally 12–24 hours for best flavour and texture).
Preheat oven to 180°C.
Arrange cookies on a lined baking tray, sprinkle with a touch of flaky salt, and bake for around 15 minutes until lightly golden.
As soon as they come out, use an upside-down glass to swirl and shape the cookies into perfect circles.
