Beetroot is truly the ruby of the fruit and veg world. Not only does it bring a gorgeous vibrancy to any dish with its iconic deep red colour, but it's also a nutrient-dense root vegetable packed with dietary fibre, folate, potassium, and antioxidants.
That said, we know how divisive this veggie can be. Its earthy flavour is loved by some and... not so loved by others, especially kids!
That's exactly why we're obsessed with this Hidden Beetroot Chocolate Brownie recipe by Jessica Cairney (@raisingourlittleones). The beetroot disappears completely into the batter, leaving you with a gloriously moist, fudgy brownie that sneaks extra nutrients past even the fussiest of eaters!
Ingredients

1 cup cooked beetroot

1 cup plain flour

½ cup cocoa powder

1 cup sugar

2 eggs

1 tsp vanilla

1 tsp baking powder
Directions
Preheat oven to 180 degree Celsius and line a baking tin
Blend the cooked beetroot until smooth
In a bowl, mix the eggs, sugar, oil, and vanilla
Stir in the blended beetroot
Add flour, cocoa and baking powder. Mix gently until combined
Pour into the tin and bake for 25-30 minutes
