Sticky Pork Mince Stir Fry
Skip the takeout and recreate this sticky pork mince stir fry to incorporate more greens into your diet.
Ingredients
Everything for 4 servings
- 2 tbsp extra virgin olive oil
- 500g pork mince
- 2 garlic cloves, minced
- 2 tsp crushed ginger
- 200g green beans
- ½ head broccoli
- 2 carrots
- 1 ½ cups basmati rice
Sauce
- 1 tbsp cornflour
- 4 tbsp soy sauce, reduced salt
- 2 tbsp oyster sauce
- 2 tbsp honey
- 100ml water
Method
Place rice in a rice cooker and submerge with 2 ¼ cups water. Cook on quick cook/steam or white rice function.
Prepare vegetables: Trim ends of green beans and cut in half, chop broccoli into small florets, and peel and chop carrots into half moon shapes.
Heat the olive oil in a large pan over medium-high heat. Cook the mince for 5-7 mins until browned.
Add the garlic, ginger and vegetables and cook for a further 5 mins, until vegetables slowly soften.
While this is cooking, prepare the sauce. In a bowl, gradually add the soy sauce to the cornflour so it doesn’t clump. Add in the other ingredients and stir until smooth.
Turn the heat up to high, and add in the sticky sauce. Allow it to bubble and coat everything.
Serve over a bed of rice, and sprinkle with sesame seeds
