One-Pot Beef & Veggie Noodle Stir-Fry

Ingredients
Everything for 2 servings
- 500g lean beef mince
- 4 garlic cloves, minced
- 1 carrot, julienned
- 1 head broccoli, cut into florets
- 1 cup beef stock
- 250g Hakubaku Organic Udon Noodles
- 8 spring onions, chopped
Stir-Fry Sauce
- 1/3 cup Kura Organic Soy Sauce 250 ml
- 1 cup beef stock
- 1/4 cup hoisin sauce
- 2 tbsp Organic Apple Cider Vinegar 500ml
- 1-2 tsp Australian Chilli Oil Mix Original 250g
- 1 tbsp arrowroot starch or cornstarch
Method
Heat a large pan over medium heat. Cook the beef mince for 3-4 minutes until almost browned.
Add the garlic, broccoli, and carrot. Cook for another 4 minutes until the veggies are tender.
While the beef and veggies cook, whisk together the soy sauce, beef stock, hoisin sauce, apple cider vinegar, chili oil, and arrowroot starch in a jug.
Add 1 cup of beef stock to the pan, followed by the ramen noodles and spring onions. Bring to a low simmer. After 2-3 minutes, flip the ramen bricks. Simmer for another 3 minutes, using tongs or chopsticks to gently pull the noodles apart as they soften.
Pour the stir-fry sauce over the beef and noodles, stirring to combine.
Remove from heat once the sauce has thickened. Serve with sesame seeds. Enjoy!
