Hot Honey Chicken Bowls
It's hot, sweet, savoury and fresh - this dish hits all the right notes. Packed with the perfect balance of protein and veggies, it's a flavour-packed meal you'll want on repeat.
Ingredients
Everything for 2 servings
- ½ cup rice, uncooked
- 400g chicken thighs
- 1 tbsp olive oil
- 1 tbsp sriracha (more or less to taste)
- ¼ cup honey
- 60g halloumi, sliced
- ½ medium cucumber, thinly sliced
- 1 mango, thinly sliced
- 1 spring onion, finely sliced
Method
Cook the rice according to packet instructions and set aside
In a large bowl, combine the chicken thighs, olive oil, sriracha and honey. Mix well so the chicken is fully coated
Heat a large pan over medium–high heat with a drizzle of olive oil. Add the chicken and cook for ~5 minutes per side, until sticky, caramelised and cooked through
Remove the chicken from the pan and set aside
In the same pan (with that leftover hot honey goodness), add the halloumi and cook until golden on both sides
Assemble your bowls: divide the rice between two bowls, then top with hot honey chicken, halloumi, cucumber and mango. Finish with spring onion and any extra herbs you love
