Ingredients

Everything for 12 servings

  • 350g mashed ripe banana
  • 1/4 cup avocado oil or olive oil
  • 1 egg
  • 1/2 cup rolled oats
  • 200g all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 cup coconut sugar
  • 2 cups diced kiwi fruit (about 5 kiwis)

Method

Preheat the oven to 160°C and line a muffin pan with liners.

In a large mixing bowl, add the banana, oil, and egg, and whisk until well combined.

Add the flour, oats, baking powder, and coconut sugar. Stir until just combined.

Divide the mixture between the muffin cups and bake for 30 minutes, or until a toothpick inserted into the centre comes out clean.
