HASSELBACK PUMPKIN

Whenever people think of pumpkin, they may immediately picture a bowl of warm, comforting (maybe a bit boring) pumpkin soup. However, this veggie is much more versatile and magical than just for soup. It can be a delicious side dish that completes your next dinner party, especially if you’re making this decadent Hasselback Pumpkin recipe by @madsdietitian.

Ingredients
  

  • 1/2 butternut pumpkin
  • 2 garlic cloves thinly sliced
  • olive oil
  • honey
  • goats cheese
  • seeds to top (I used pepitas, sunflower and flax seeds)

Instructions
 

  • Preheat oven to 200 degrees celsius
  • Cut butternut pumpkin in half lengthways and scoop out filling
  • Slice small indents in pumpkin, avoid cutting all the way through. Add slices of garlic in the cracks
  • Drizzle with olive oil and honey and cook for ~ 30 minutes or until cooked through and honey is caramelised
  • Top with goats cheese and seeds mix
