Crunchy Pear Salad by @goodnessavennue
Ingredients
- 1/3 cup uncooked quinoa
- 1 head cos lettuce, chopped
- 1 small red onion, thinly sliced
- 1 green pear, thinly sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup toasted coconut clusters
- 2 tablespoons tahini
- Juice of 1 lemon
- 1 tablespoon white miso paste
- 2 teaspoons honey
- 1/4 teaspoon garlic powder
- Water, to thin
- Salt and pepper, to taste
Miso Dressing
Directions
Cook the quinoa according to package instructions.
- While the quinoa cooks, whisk the dressing ingredients in a small bowl until smooth, thinning with water as needed.
- Combine the lettuce, red onion, pear, feta, and cooked quinoa in a large mixing bowl. Pour over the dressing and toss to combine.
- Top with toasted coconut clusters and serve.
