- 1-2 Chicken breast (pending how many serves you would like)
- Olive oil
- Mexican seasoning
- 1 Onion
- 1 Capsicum
- 1 cup Rice
- Lettuce
- Corn
- Tomatoes

Topping
Directions
Thinly cut chicken breast, coat with olive oil and seasoning.Cut onion and capsicum into thin slices.
Cook chicken, onion and capsicum together over medium heat. Meanwhile cook rice.
Once chicken and rice are cooked, prepare Mexican bowls with all your favourite toppings.
