These overnight carrot cake oats are so easy, you’ll wonder why you haven’t made them sooner. And the best part? You’re already getting your first of five veggie serves before lunch time.
Ingredients
- ½ cup rolled oats
- 1 cup milk (any type)
- 1/3 medium sized carrot, finely grated carrot
- 1 tbsp chia seeds
- 1–2 tsp maple syrup (adjust to taste)
- ½ tsp ground cinnamon
- 1 tbsp raisins
- 2 tbsp dairy free yoghurt (optional)
- 2 tbsps protein powder (optional)
Directions
Combine all ingredients except raisins and yoghurt in a bowl or container. Mix until well combined.
- Sprinkle raisins on top of mixture.
- Spread yoghurt across top of mixture and dust with cinnamon
- Refrigerate overnight and enjoy within 3-5 days
