Think you don’t like veggies? Think again. These chicken and zucchini meatball bowls are an easy way to pack in half of your daily veggie intake without even noticing.
Just like a poke bowl, you can mix and match ingredients to make it your own. There’s the protein, the carbs, and all the fresh toppings—tomatoes, cucumbers, mixed greens. You can even throw in some roasted veggies or corn for extra flavor.
It’s perfect for meal prep, picky eaters, or just when you want a balanced meal that doesn’t feel like you’re “eating healthy.”

Ingredients

250g chicken mince
- ½ zucchini, grated and excess moisture drained
- 1 tbsp parsley, finely chopped
- 1 tbsp dill, finely chopped
- 100g Greek feta, crumbled
- 1 egg
- 2 ½ tbsp fine breadcrumbs
- 1 tsp salt
- ½ tsp cracked black pepper
- 1 tsp onion powder

1 ½ cup Greek yoghurt
- ½ zucchini, grated and excess moisture drained
- Juice of ½ lemon
- 2 tbsp extra virgin olive oil
- 1 clove of garlic, grated
- Pinch of salt

1 cup couscous or quinoa or brown rice
- 1 ⅓ cup boiling water
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- Pickled onions (optional)

Directions
To prepare the meatballs, add all the ingredients to a large bowl and mix using your hands until the mixture is well combined and binding well. Divide mixture and roll into 12 even balls and place on a lined tray.
- Drizzle a large fry pan with extra virgin olive oil and heat over medium heat. Add all the meatballs and cook for 2-3 mins until browned, before turning to cook on the other side for another 2-3 mins. Reduce heat to low and place lid over pan, cooking to ensure meatballs are cooked through, tossing randomly. Remove from heat once cooked through and browned.
- While the meatballs are cooking, prepare the zucchini tzatziki by mixing all the ingredients together and adjusting to your preference.
- Prepare the couscous as per packet instructions.
- To serve, divide couscous and bowl ingredients across 4 bowls. Add a dollop of the zucchini tzatziki and add the chicken meatballs.
