Ingredients

2 slices of sourdough
- 2 tbsp beetroot hummus
- A few crispy lettuce leaves
- 1 small carrot, grated
- Handful of sprouts
- 2 tbsp pickled beetroot
- 1/2 avocado, thinly sliced
- 2 small tomatoes, thinly sliced
- 1/2 medium cucumber, ribboned
- 25g cheese, sliced
Directions
Spread beetroot hummus on one slice of sourdough
- Layer the lettuce, grated carrot, cucumber ribbons, tomato slices, and a light pinch of salt and pepper
- On the second slice, layer the avocado, pickled beetroot, cheese, and sprouts
- Press both halves together gently. Slice the sandwich with a sharp knife and serve immediately
