Thankfully, our boxes are filled with nutritious fruits and veggies to combat winter sickness! One of them is our humble sweet potato. Not many people know that sweet potatoes are packed with vitamins A, C, and B6, alongside other beneficial nutrients like manganese, copper, and potassium. Collectively, these elements act as a shield, helping to protect our bodies from diseases.
And since they’re already delicious on their own, it doesn’t take much to unlock their flavours. We love this Sweet Potato Hummus recipe by@singingkathleen. Ingredients
- 1 sweet potato
- 1 can of chickpeas
- 1 lemon juiced (or 2 small lemons like me)
- 3 tbsp tahini
- 4 tbsp olive oil
- 1 tbsp cumin
- 1/2 tbsp paprika
- Salt
Directions
- Dice and roast sweet potato at 200 degrees for 20 min or until golden and soft.
- Allow sweet potatoes to cool.
- Place all ingredients in a blender or NutriBullet and blend to your desired texture.
- Serve and enjoy
