Ingredients

2 cups corn kernels, fresh, tinned or frozen
- ½ red onion, diced
- ¼ cup roughly chopped fresh parsley
- ¾ cup self-raising flour
- ½ tsp salt
- 1 tsp onion powder
- ½ tsp minced garlic
- ¼ tsp smoked paprika
- 2 eggs
- 40 g freshly grated lite cheese
- 2 tbsp milk
- Olive oil spray

3 heaped tbsp Greek yoghurt
- ½ avocado
- ½ tsp minced garlic
- ½ tsp smoked paprika
Greek yoghurt dip
Directions
Place the corn, red onion, parsley, self-raising flour, eggs, milk, grated cheese, salt, onion powder, garlic, and smoked paprika into a large mixing bowl and stir gently to combine
- Heat a non-stick frying pan over medium heat and lightly spray with olive oil
- Drop 2 heaped tablespoons of batter into the pan for each fritter
- Flatten and shape slightly with the back of a spoon and cook for 2–3 minutes per side, or until golden brown and cooked through
- Transfer cooked fritters to a plate
- Whip up a simple dip combining the avocado, greek yoghurt, garlic and smoked paprika until smooth
- Serve immediately with the avocado, Greek yogurt dip
