A perfect BBQ dish, these skewers let you enjoy fresh, perfectly imperfect veggies like sweet potatoes, zucchini, and caramelised red onions—paired with buttery salmon for a smoky, flavourful bite.

Ingredients

1 medium zucchini
- 1 small sweet potato
- 1 small white potato
- ¼ red onion
- 300g salmon
- Tzatziki and mixed leaves, to serve
Directions
Wash the zucchini, sweet potato, and white potato, then use a peeler to create thin ribbon-like strips.
- Peel the red onion and separate it into layers.
- Dice the salmon into small cubes.
- Assemble the skewers by threading the salmon, vegetable ribbons (folded), and onion pieces alternately.
- Grill on a barbecue for about 15 minutes, turning occasionally. If using a stovetop, cook over medium heat until the salmon is fully cooked and the veggies are tender.
- Remove from heat and serve with mixed leaves and your favourite dip—tzatziki is a perfect match
