Minty Lentil Salad
Ingredients

1/2 cup uncooked Puy lentils
- 1 red capsicum, diced
- 1 red apple, diced
- 1/4 red onion, diced
- 1 carrot, grated
- 1 cup finely chopped mint leaves
- 1/3 cup crumbled feta cheese

Juice of 1 lemon
- 2 tablespoons olive oil
- 1/2 teaspoon garlic powder
- Salt + pepper to taste
Lemon Dressing
Directions
Cook lentils according to package instructions. Rinse under cold water to cool.
- Add the cooked lentils to a large bowl along with the diced capsicum, apple, onion, carrot, mint, and feta cheese.
- In a small bowl, whisk the lemon juice, olive oil, garlic powder, salt, and pepper.
- Pour the dressing over the salad and toss well to combine.
- Serve and enjoy!
