Hot Honey Chicken Bowls

Packed with the perfect balance of protein and veggies, it's a flavour-packed meal you'll want on repeat.
Ingredients

½ cup rice, uncooked
- 400g chicken thighs
- 1 tbsp olive oil
- 1 tbsp sriracha (more or less to taste)
- ¼ cup honey
- 60g halloumi, sliced
- ½ medium cucumber, thinly sliced
- 1 mango, thinly sliced
- 1 spring onion, finely sliced
Directions
Cook the rice according to packet instructions and set aside
- In a large bowl, combine the chicken thighs, olive oil, sriracha and honey. Mix well so the chicken is fully coated
- Heat a large pan over medium–high heat with a drizzle of olive oil. Add the chicken and cook for ~5 minutes per side, until sticky, caramelised and cooked through
- Remove the chicken from the pan and set aside
- In the same pan (with that leftover hot honey goodness), add the halloumi and cook until golden on both sides
- Assemble your bowls: divide the rice between two bowls, then top with hot honey chicken, halloumi, cucumber and mango. Finish with spring onion and any extra herbs you love
