Whenever people think of pumpkin, they may immediately picture a bowl of warm, comforting (maybe a bit boring) pumpkin soup. However, this veggie is much more versatile and magical than just for soup. It can be a delicious side dish that completes your next dinner party, especially if you’re making this decadent Hasselback Pumpkin recipe by @madsdietitian.

Ingredients
- 1/2 butternut pumpkin
- 2 garlic cloves thinly sliced
- olive oil
- honey
- goats cheese
- seeds to top (I used pepitas, sunflower and flax seeds)
Directions
Preheat oven to 200 degrees celsius
Cut butternut pumpkin in half lengthways and scoop out filling
Slice small indents in pumpkin, avoid cutting all the way through.
Add slices of garlic in the cracks
Drizzle with olive oil and honey and cook for ~ 30 minutes or until cooked through and honey is caramelised
Top with goats cheese and seeds mix.
