With a million ways to cook potatoes, this might arguably be a top contender on the potato podium.
Crispy smashed potato bites. Ah, as the name suggest, crispy edges, fluffy centres, and totally addictive — it’s the kind of dish that disappears fast because everyone loves it. Guaranteed a crowd-pleaser for potlucks, dinners, or any occasion.
Ingredients

1 tbsp melted butter or dairy free alternative
- 2 tbsp extra virgin olive oil
- Dried rosemary
- Salt & pepper

Directions
Bring a pot of water to boil, add 1 tbsp of salt to water. Cook potatoes until soft and easily pierced with fork - about 30-40 mins.
- Preheat oven to 220c. Grease and line a baking tray.
- Drain potatoes and place on baking tray. Smash potatoes using a glass, masher, fork or ramekin. The thinner the potato layer = crispier.
- Brush potatoes well with melted butter (or dairy free alternative). Drizzle with olive oil and season to taste.
- Bake potatoes for approx 1hr or until they have reached desired crispiness.
- Serve immediately with your favourite dip or sauce!
