Cripsy air-fried gnocchi, ready in under 15 minutes!
Warning: These gnocchi disappear faster than you can cook them! 👀 @cookedbyclauds used Rustica Viva potato gnocchi from the Farmers Pick Fridge. They are crafted by passionate pasta makers who turn perfectly imperfect potatoes into perfect bites, all while supporting a circular food system.
Snack them straight from the air fryer, toss them on a salad, or dunk them in your favourite sauce. Quick, versatile, and dangerously delicious.
Ingredients

800g Rustica Viva Country Potato Gnocchi
- 3 tbsp extra virgin olive oil
- 2 tbsp grated parmesan
- Three-finger pinch of salt flakes

100g Meredith Dairy Chevre Plain Goat Cheese
- 2 heaped tbsp Meredith Dairy Natural Sheep Milk Yoghurt
- ½ avocado
- 1 handful parsley
- Juice of ½ lemon
- 1 garlic clove
- 1 tbsp extra virgin olive oil
- 1 tsp of salt
Crispy Gnocchi
Goat's Cheese Dip
Directions
Coat the gnocchi in the oil, parmesan and salt flakes before placing into the air fryer to cook at 180°C for 12 minutes or until golden brown and crunchy. (Optional: You can separate the gnocchi and cook in two batches to get more of an even golden cook on all).
- While the gnocchi is cooking, place all the dip ingredients into a blender and blend into a smooth creamy consistency, and season to your liking.
- When the gnocchi is cooked, quickly drizzle with some more olive oil and toss to coat. Sprinkle some parmesan and chopped parsley on top and serve with the goat's cheese dip.
