Ingredients
- 4 medium carrots, roughly diced
- 3 medium sweet potatoes, roughly diced
- 2 cloves garlic, minced
- 3 tbsp olive oil
- 4 tbsp maple syrup
- 1 sprig of rosemary
- 2 tsp cinnamon
- 2 tsp dried thyme
- 2 tsp flakey sea salt
- 1 tsp pepper
Directions
Preheat your oven to 200°C
In a large oven safe dish combine the chopped sweet potatoes and carrots
Sprinkle over the garlic, olive oil, maple syrup, herbs and spices. Toss well until all of the vegetables are evenly covered
Roast for 30 minutes then toss the vegetables halfway through. Bake for another 15-20 minutes or until golden and remove from the oven
