Ingredients

Use your favourite chocolate cake recipe and bake it in two layers.
- 50ml water
- 1 tbsp cornstarch
- 1 tbsp lemon juice
- 2 tbsp white sugar
- 500g fresh cherries, pitted
- 115g butter, softened
- 225g cream cheese, softened
- 65g cocoa powder
- 440g icing sugar
- 1 tsp salt
- 1 tsp vanilla essence

Directions
Cherry Sauce
In a saucepan (off the heat), combine all ingredients except the cherries.
- Place over medium heat, whisking constantly until thickened.
- Stir in the cherries and mix for 8-10 mins, mixing occasionally until the sauce is a jammy consistency.
- Transfer to a container and refrigerate until cool, overnight is preferable.
Chocolate Cream Cheese Icing
In a large bowl, combine the butter, cream cheese, vanilla and salt with an electric mixer for 2 minutes.
- Sift in the cocoa and icing sugar in two parts, beating for 2-3 until the mixture is lighter in colour and completely mixed.
Assembly
- Place one of the cake layers on a cake base and pipe half the icing on top.
- Top with 1/3 of the cherry sauce, leaving a ring around the outer part (you will have leftover sauce for other desserts!).
- Place the second cake layer on top and ice and top with fresh cherries, and mint leaves for a festive touch!
