It's day 8 of our 12 days of Christmas recipes and your classic chocolate chip cookie just got an upgrade -@lourdesleschen absolutely smashed this recipe and created a soft, chewy chocolate cookie packed with juicy cherries. Pairs beautifully with warm milk... if there's any left after your family sneaks them straight from the tray.

Ingredients
-
250g butter from Farmers Pick
-
1 cup white sugar
-
1 cup brown sugar
-
2 eggs from Farmers Pick
-
3 ½ cups self-raising flour
- 1/2 cup cherries from farmers pick, pitted and sliced
- 250g dark chocolate chips
-
Pinch of salt
Directions
Cream together the butter, sugars and salt until light and fluffy.
- Add the eggs and mix well.
- Sift in the flour and mix until just combined.
- Roughly chop the chocolate bars and fold through the dough.
- Wearing gloves, add a few cherry pieces to each cookie.
- Roll the dough into balls weighing 40–50g. If time allows, chill for at least 15 minutes (or ideally 12–24 hours for best flavour and texture).
- Preheat oven to 180°C.
- Arrange cookies on a lined baking tray, sprinkle with a touch of flaky salt, and bake for around 15 minutes until lightly golden.
- As soon as they come out, use an upside-down glass to swirl and shape the cookies into perfect circles.
