A beautiful, rustic caramelised onion and sweet potato puff pastry.
This is comfort food at its finest – warm, hearty, and perfect for those crisp evenings. There’s something about the rich sweetness of the onions paired with the earthiness of the sweet potato that makes every bite feel like a cozy hug. It’s the kind of dish that turns a simple meal into something special, just like the best Sunday gatherings.
You only need 6 simple staple ingredients which you can get from our Farmers Pick Pantry.
Ingredients

2 Sheets puff pastry
- 3 Sweet potatoes
- 2 Tbsp olive oil
- 2 Tbsp honey
- 1 Egg

4 Tbsp Beerenberg Caramelised Onion Chutney
Directions
Caramelise the sweet potatoes first, slice them into 1/2 cm slices, coat with olive oil and honey. Roast in the oven on high at 200 degrees for 20min until golden brown, or use your air fryer.
- Around 10min before removing the sweet potatoes from the oven/air fryer. Make sure to remove the puff pastry from the freezer and wrapping, allowing it to thaw (see package instructions). Cut the pastry sheets into halves, giving you four pieces.
- Transfer the pastry squares to a lined sheet, you might need two depending on the size of your trays.
- Score a 1cm border around the edge of the pastry with a knife.
- Prick the inside of the border all over with a fork (this is importantly as it will avoid the pastry from getting a soggy bottom!)
- Once the sweet potatoes have been caramelised, remove from the oven/air fryer set aside. Turn the oven down to 180 degrees Celsius.
- Crack the egg and scramble it with some salt and pepper. Using a brush, lightly brush the egg over the pastry.
- Add 1.5 tsp of the caramelised onion onto the base of the pastry, spread evenly. Layer with your sweet potato slices. Once again brush with the egg over the sweet potato. Sprinkle some fresh rosemary.
- Fold the edges of the pastry slightly over the sweet potato. Place the filled pastries into the oven and bake for 18-25min depending on the thickness. Pastry should be golden brown.
