Did you know that bananas are technically berries, while kiwis are actually classified as berries too?
Botanically speaking, berries are defined as fruits produced from a single ovary, with seeds embedded in the flesh. Factually speaking, they are both delicious and taste so good when baked! So, the next time you enjoy a banana or slice into a kiwi, why not try making this banana kiwi muffin by @goodnessavenue instead! The combination between both banana and kiwi creates a sweet yet tangy flavour that’ll make you want to start putting these two berries in every dessert!
Ingredients
-
350g mashed ripe banana
- 1/4 cup avocado oil or olive oil
- 1 egg
- 1/2 cup rolled oats
- 200g all-purpose flour
- 2 teaspoons baking powder
- 1/4 cup coconut sugar
- 2 cups diced kiwi fruit (about 5 kiwis)

- In a large mixing bowl, add the banana, oil, and egg, and whisk until well combined.

- Divide the mixture between the muffin cups and bake for 30 minutes, or until a toothpick inserted into the centre comes out clean.
