Day 9: Balsamic Glazed Mushrooms
Tonight's side dish might just be the sleeper hit of your holiday menu. Sticky, savoury, tangy and ridiculously easy - consider this your new go-to side even after the festive season is over.
Serve alongside your Christmas roast or pile it over creamy mashed potatoes.
Ingredients

450g button mushrooms, whole or halved if too big
- 1 tbsp olive oil
- 3 tbsp balsamic vinegar
- 1 tbsp soy sauce
- 1 clove garlic, thinly sliced
Directions
Preheat oven to 200°C
- In a large bowl, whisk together olive oil, balsamic vinegar, soy sauce, and garlic.
- Add mushrooms to a baking dish and toss well until evenly coated
- Bake for 30 minutes, stirring once halfway, until mushrooms are tender and glazed
- Remove from oven, transfer to a serving dish, and drizzle over the extra glaze and garlic pieces
