Day 2: 3 Ingredient Vegan Cherry Cobbler
For Day 2 of our 12 Days of Christmas Recipes, we’re keeping things ridiculously easy with a 3-Ingredient Cherry Vegan Cobbler. It's the kind of dessert you throw together in five minutes and everyone thinks you spent all afternoon on.
Juicy cherries, a golden crunchy top, and zero dairy… it’s festive, foolproof, and secretly healthy-ish. Perfect for last-minute guests, picnics, BBQs, or when you just want something warm and sweet after a big day of holiday madness.
Ingredients

800g (roughly) perfectly imperfect cherries
- 1 packet vanilla cake mix
- ½ cup vegan spread
Directions
Preheat oven to 175c (convection).
- Remove stems and pits from cherries. Cut in half and spread evenly across the bottom of a medium oven safe glass dish.
- In a bowl, combine cake mix and vanilla spread until mixture forms a crumble.
- Sprinkle crumble across cherries.
- Bake for 55-65 minutes, increasing temperature up to 180c for the final 15 mins. Remove from oven once golden brown and bubbling.
- Allow to cool slightly before serving.
Recipe Note
You can adjust the amount of cherries required according to the size of your dish
Not all cake mixes are vegan, please check packaging ingredients before choosing. It will also work with non vegan cake mixes (i.e. buttermilk cake mix)
