Ingredients
-
1 head of broccoli or few baby broccoli
-
500g Marchetti dried orecchiette (or any pasta)
- 2 tbsp extra virgin olive oil
- 2 garlic cloves, thinly sliced
- ½ red chilli, thinly sliced
- 2 anchovy fillets
- 2 slices of shortcut bacon, finely diced
- 3 pork sausages, casing removed
- 2 tbsp grated parmesan
- 1 tbsp basil pesto
- Basil leaves, to serve
-
optional: mixed herbs for extra flavour
Directions
Bring a large pot of slightly salted water to a boil. Add the pasta and broccoli florets. Cook the broccoli for approximately 10 minutes, until tender when pierced with a fork. Use a spider strainer to remove the broccoli once cooked. Cook the pasta according to the packet instructions until al dente. Reserve a cup of pasta water before draining.
- Meanwhile, heat the olive oil over medium heat in a large frying pan. Add the garlic, chilli and anchovy fillets and keep stirring until anchovies have dissolved. Add the bacon and sausage, and use a wooden spoon to mash up the sausage meat into small pieces. Cook until lightly browned.
- Add the broccoli, reserved pasta water and a tablespoon of parmesan to the pan. Allow to simmer for a couple of minutes. Using a wooden spoon/potato masher, gently mash the broccoli.
- Using a slotted spoon or spider strainer, add in the cooked orecchiette and pesto. Continue cooking over medium-high heat, mixing everything together, until well combined.
- Remove from heat and serve with the extra grated parmesan and basil
