You’ll definitely want to have this breakfast on repeat! This recipe is not only creamy and packed with fibre, but it’s also perfect for meal prep. Just prepare your chia seed pudding overnight and let the refrigerator do all the work.

Ingredients

1 mango, extra to serve
- 1 cup milk (you can use coconut milk to make it extra coconut-ty)
- 1/3 cup Greek yoghurt
- 1/3 cup chia seeds
- 2 tsp vanilla extract
- 3 tbsp coconut cream
- 1 tbsp coconut flakes
- Optional: cinnamon and LSA to top
Directions
Peel you mango and then mash or puree until it is smooth
To a container add in the milk, yoghurt, chia seeds, mango puree and vanilla. Mix with a fork for about 2 minutes
Refrigerate for at least two hours, preferably overnight
Serve with a few dollops of coconut cream, extra sliced mango, cinnamon and LSA
