With just 15 minutes of cooking time, you can enjoy this classic Sichuan street food for lunch or dinner -and maybe breakfast if you are a real spice lover!
This Dan Dan noodle dish is deliciously spicy, nutty and fragrant. The best part is you can add any Farmers Pick perfectly imperfect veggies as your toppings, making them a fantastic dish to help clean up your leftover produce.

Ingredients

350g Hakubaku Organic Udon Noodles
- 2 Tbsp oil
- 3 Celery stalks finely chopped
- 4 Mushrooms finely chopped
- 1 Tbsp ginger finely chopped
- Spring onion finely chopped
- 4 Cloves garlic (grated)
- 3 Tbsp Australian Chilli Oil Mix Original
- 3 Tbsp Kura Organic Soy Sauce
- 3 Tbsp brown sugar

2 Tbsp Peanut Butter Smooth
- 1 Tbsp vinegar (preferably rice wine) but any vinegar will do.
- 1/2 Cup boiling water
Directions
To a large non-stick pan, stir fry all the vegetables for the noodle mixture. Whilst this is preparing add some water to a pot for the noodles. Allow the water to boil before adding the noodles to the pot.
- Make the Spicy Sauce: Simply add all ingredients to a bowl and whisk to thoroughly combine. Finally add the spicy sauce to the vegetable mixture.
- Once the noodles are cooked according to package directions. Strain the noodles and reserve the cooking water. Gently add the noodles to the vegetable mixture and lightly fry for 5 min.
- Start by assembling the bowls: For each bowl, first add about 180 grams of noodles. Top with the vegetables. Enjoy it as it is, or add 1/3 Cup of the boiling liquid from the noodles to the bowl and drizzle with some extra chilli oil.
