Galettes are like pies’ humble, more laid-back siblings—just as delicious but often overlooked. @essentiallyellanutrition’s Cherry Galette recipe comes together in only 35 minutes, yet the taste-to-effort ratio is unmatched.

Ingredients

2 generous cups cherries, pitted
- 2 tbsp brown sugar
- 2 tsp vanilla extract
- 1/2 lemon, juice only
- 1 tbsp cornstarch
- 1 sheet puff pastry
- Extra brown sugar to top
Directions
Preheat the oven to 180°C and line a tray with baking paper
In a saucepan, combine the pitted cherries, brown sugar, vanilla extract and lemon juice. Gently simmer for about 5 minutes, until the cherries are evenly coated and the ingredients are well combined
Remove from the heat, drain the excess liquid (keep this for later) and mix in the cornstarch
Roll out the puff pastry sheet onto the baking tray. Dust the centre with a little bit of before placing the cherry mixture in the centre of the pastry, leaving about a 3c border around the edges
Carefully fold the edges of the pastry up over the cherry filling, overlapping as you go to create a rustic shape
Sprinkle a little extra brown sugar over the folded pastry edges
Place the galette in the preheated oven and bake for 25 minutes or until the pastry is golden brown and crispy.
Remove the galette from the oven, brush over the reserved cherry juice, and serve warm
