Rob’s pasta kitchen runs on a fully circular model, upcycling all vegetable scraps and eggshells into insect protein that feeds the chickens laying the eggs for the gnocchi. You’ll even see the natural flecks from unpeeled potatoes, which add flavour and prevent waste.
