This seasonal favourite combines sweet roasted pumpkin with aromatic sage for a flavour-packed twist on the classic gnocchi.
Made in small batches using an old Italian recipe, Rob, from Rustica Viva works with us to rescue perfectly good pumpkins that often go to waste due to oversupply. Paired with premium Australian flour, this gnocchi is part of a completely circular system: all vegetable scraps and eggshells are upcycled into insect protein that feeds the chickens which lay the eggs for the pasta.
By using the whole vegetables, nothing is wasted, and every bite is filled with rich, earthy flavour. Perfect with browned butter and parmesan or a drizzle of olive oil.
