Made in small batches using an old Italian recipe, our Country Potato Gnocchi is crafted by Rob, a pasta maker with over 15 years’ experience.
We supply Rob with perfectly imperfect Australian potatoes that might otherwise go to waste as 40% of Australian potatoes do. Instead of peeling, he uses the whole potato, skin and all, for extra flavour and zero waste. Every batch is made with premium Australian flour, and the offcuts and scraps are upcycled into insect protein to feed the chickens that lay the eggs for the gnocchi — making this a fully circular product.
Soft, pillowy, and full of rustic charm, this gnocchi is the ultimate base for your favourite sauce or a golden, pan-fried finish.
